I'm looking to plant a vegetable garden in North Carolina, zone 8a, mainly to prepare for potential economic hardships. I currently have two 4'x8' raised beds, and I might create more. I'm aiming for high-yield, nutritious vegetables that don't take up too much space. I'm also interested in buying canning supplies and would appreciate any tips on affordable starter kits or advice!

Cucumbers and squash are great options! They can yield a ton, just watch out for pests. Companion planting with marigolds or nasturtiums can help and they're edible too! If you put in a trellis, they'll save a lot of space. For quick-growing options, try bush beans or peas; they mature fast and can keep producing until frost. Peanuts also thrive in NC!

You can't go wrong with potatoes, pole beans, and tomatoes. Sweet potatoes and cucumbers are good bets too. I struggled with beans last year, but it's worth experimenting. Corn can be space-heavy, so pick plants that grow well together to make the most of your garden.

Thanks! I had tomatoes, bell peppers, and potatoes last year among others. My jalapeños did well, but the rest were hit or miss. Maybe I didn't get the beans right. Gonna give potatoes another shot this year!
