I'm in the process of installing a new medicine cabinet, but I've noticed that the wall is slightly uneven, with about an 1/8 inch sticking out on both sides. I'm planning to secure it to the studs and use drywall anchors, but I'm a bit worried since the cabinet weighs around 50 pounds. Will using 2-3 screws in the studs along with 4 wall anchors be enough to hold it, or will I need to sand down the wall to make it plumb?

I agree with using shims! Just wedge them in until it feels secure. You don’t necessarily have to glue them, but if it makes you feel better, a bit of adhesive can help keep them in place.
As long as you're anchoring into the studs, you should be fine. It might be a good idea to use shims on the sides to keep it stable and prevent rocking. Once it's mounted, consider adding a small trim piece; it can cover any gaps and give a finished look.
