Should I go with PEX or stick to copper for my faucet replacement?

I'm about to replace my kitchen faucet and I'm considering installing ball shut-off valves on both water lines. My father-in-law suggested I switch to PEX during this process. I know that if I cut the copper pipes, I can reuse the adapters and just solder them back on. I'm planning to connect a braided supply line from the new faucet to the existing setup. What would be the best approach—stick with copper or switch to PEX? I'd love to hear your advice!

Honestly, if there are no shut-off valves under your sink, you could just cut the copper and install a compression stop valve instead. No need for sweating joints if you just want to add a valve; I don't see much advantage in switching to PEX.

That’s a good point! The closest shut-off is the main one, which is why I wanted to add a valve here for convenience. Gonna add one for both hot and cold lines too.
