I just moved into a flat where the ceilings are currently a 'true white,' but I'm looking to paint the walls in a slightly off-white shade. I'm wondering if I should also paint the ceilings with the same color as the walls or if it will be okay to leave them as they are. What do you all think?

You can totally leave the ceilings as they are! The way light hits the ceiling will make it look different anyway, so the shades won't clash as much as you might think. Just go ahead and use what you like for the walls!
No need to match! I've painted my ceilings a dove grey to make them feel higher, and it pairs just fine with off-white walls. Just make sure the edges between colors are neat; it keeps everything looking sharp and intentional. Plus, 'ceiling white' isn't even a true white anyway!
It'll probably look just fine if you leave the ceilings as they are. Just keep in mind that if your off-white has any yellow tones, the contrast with a truly white ceiling could make those colors pop more than expected. Lots of people go for white ceilings with different wall colors; it can actually look pretty intentional too!
