I came up with a design that requires plywood sandwiched between pieces of wood, which is much faster and cheaper than using individual wood pieces for both the base and top. However, the problem is that the edges of the plywood will be exposed. I'm looking for efficient ways to hide or cover these edges, or do I even need to worry about it? My project is essentially a tabletop workstation aimed at users like us.

Have you thought about edge banding? It’s a pretty straightforward solution. You can iron it on and then just cut off any excess. It could save you time and give your tabletop a nice finish. Plus, if you're worried about durability, you can always use larger pieces of thin wood to achieve a similar effect.
