I've done quite a bit of renovation work on my 30-year-old house, including removing carpet, installing wood floors, and adding some non-support walls. I've also added new flooring, like LVP, and put in porcelain showers. Recently, I've noticed nails popping out of the sheetrock in various places, and most of them aren't even near the areas I've renovated. Can anyone explain what's happening and how I can fix this?

This is actually pretty common during renovations! When you take down or put up walls, it can change how the loads are distributed in the house, even if the walls aren’t load-bearing. This leads to movement, causing old nails used for hanging sheetrock to back out. The best fix is to remove the old nails and replace them with screws positioned just above or just below where the nails were.
