I recently ordered a Hock chip breaker for my #5 plane from Lee Valley, but it arrived with a nick on the corner that I need to fix. I'm wondering if I can simply grind a new edge using my 140 grit lapping plate and leave it at that, or if there's a reason to smooth it out with higher grits like I would with a regular blade.

You should contact Lee Valley about a replacement if it came damaged. They typically handle these issues well. I had a similar situation where they offered me a discount or a replacement.
It's important for the surface of the chip breaker that contacts the plane iron to fit tightly. If it’s not smooth and there’s any gap, bits can get trapped and clog the plane mouth. You don't need to polish it, just make sure it fits snugly.
I usually polish older chip breakers, especially if they're made of softer steel that has pitted. A smoother surface definitely doesn't hurt.
