I'm fairly new to plant care and I've come across mixed advice about watering after repotting. When repotting, isn't it normal to break some roots? Doesn't that mean they should have some time to heal or callous before I give them water?

It really depends on your soil's moisture level. If your mix is already damp, I’d recommend waiting a bit before watering. I usually prepare a lot of my potting mix in advance, so I often end up watering right away. But for soil-less mixtures, it’s probably better to water right after repotting.
Honestly, I've lost several plants from watering right after repotting. It makes sense that damaged roots need time to heal to avoid root rot. I've experimented by not watering my latest repots, and they seem to be doing better!
From my experience, watering immediately after repotting isn't always the best move. I usually only water if I barely touched the roots or if I know the plant is strong and healthy. Roots definitely need some time to recover from any damage they might have taken during the process.
