I've been trying to grow mustard seeds, but every time I plant them, I come back to find they've been dug up or even eaten by pigeons. Does anyone have tips on how to prevent this from happening?

I’ve heard of some people hanging aluminum foil pie pans from a plant stake. The spinning can distract the birds. I can't vouch for how effective it is, but it might be worth trying before hunting them!
Netting over your garden bed can also work, but be aware that pigeons can sometimes tear it off if they are persistent. It's worth a shot, though!
You might want to try covering your seedlings with cardboard or horticultural cloth to keep those pesky pigeons away. It can help create a barrier while still allowing light to get through.
