What’s a plant you didn’t expect to survive the cold?

I was really surprised to find some of my spinach still alive after being buried under snow multiple times this winter. I'm curious if there are other plants that have surprisingly lasted through the cold or even flourished later in the season than expected. Anyone have their own experiences?

Russian kale really surprised me! I dug through the snow and found fresh kale thriving under there. It’s amazing how resilient it can be!

I've noticed that snapdragons can handle a lot of snow—got hit twice this winter and they're still looking great!

Kale is another one that would just survive all winter at my old place, even in snow-covered conditions. Plus, I’ve had hens and chicks that look like succulents, yet they thrive outdoors while many others struggle.

My jalapeno peppers (in pots) always seem to hang on and grow later than I’d expect every year!

Maybe the heat from the peppers helps keep the plants cozy?
