I recently picked up an adjustable height desk from Ikea, but I didn't expect the hand crank mechanism to take so long to adjust the height. I'm looking for ways to motorize it or at least create a faster crank system. Any suggestions?

A simple solution is to create a wooden block that fits around the crank handle, embedding a bolt into it. Then, just attach a drill to that and use it to crank the desk up and down much quicker! No need for a motorized system if you're looking for a quick fix.
