I think you might run into some cleaning issues with those. It could be worth it to bring a few samples home and do a little test. Maybe splash some oil on them to see if it wipes off easily or if the brick is too porous and stains. You might want to try cleaning up things like cake batter or flour to see how they hold up.
We installed white brick tiles with white grout, and surprisingly, it's the part of our kitchen that gets the most compliments! They can really elevate the space if done right.
