What are the best summer cover crop options for my garden?

I'm preparing for some surgeries this summer, which means I won't be able to tend to my garden as usual. With about 10 4x8 beds, I'm worried about them becoming overrun with weeds if I don't plant anything. I'm specifically looking for annual cover crops, flowers, or other plants that can thrive on minimal care, just occasional watering. I've worked hard to manage the weeds over the years, and I'd like to maintain the progress. Any suggestions would be greatly appreciated!

If you're looking for some great cover crops, I recommend trying out alyssum in white, purple, or yellow. They are pretty low-maintenance. Also, portulaca is a fantastic choice as it self-seeds easily, which is perfect for your situation. Just make sure you're focusing on annuals since you'll want to switch back to veggies next year!
