I'm working on my first indoor furniture project - a step stool made from maple and walnut. My previous experience is limited to making cutting boards, so I'm seeking advice on the best type of finish to use. I'm hoping for something that has minimal fumes and provides durability for months. Any suggestions?

Have you looked into Osmo PolyX? It's a hardwax oil that was designed for floors, so it's super tough. It's easy to apply and doesn't require sanding between coats, plus it has low VOCs. Two coats should do the trick!
I like to mix my finishes for something like this. Try combining 1/3 oil-based poly, 1/3 Danish oil, and 1/3 mineral spirits. Apply light coats with a rag, around 3 to 5 should do it. This mix is easy to use and really brings out the wood grain! Just remember to let the rags dry out properly to avoid any fire hazards.
I prefer using Danish oil followed by varnish oil instead of multiple products. You can start straight with varnish oil if you want to keep it simple. Just keep in mind that finishes like polyurethane or hardwax might hold up better in the long run, but I kind of like the character that comes with some wear and tear on my projects.
I'd recommend going with oil-based polyurethane. It's really durable and takes spills well, plus the fumes don't linger for long at all. Perfect for a step stool!
