I'm a big fan of top-down bottom-up shades, but I'm curious if there are options available that also allow for both light filtering and light blocking, like traditional night-day shades. Do those types of shades exist?

Absolutely! Most major manufacturers offer top-down bottom-up shades that can also function as night-day shades. You should definitely check them out when you're looking for new options.
We have a set of cellular shades like this in our bedrooms, and they're perfect for what you're describing. We got ours from Levolor at Lowe's.
These shades have been around for a while, especially in RVs. They're really versatile, so you shouldn't have trouble finding them!
