I just bought a new house and I've noticed that the garage floors are painted with roof paint, which looks terrible and doesn't hold up during my projects. What are some good options to save my garage floors? I was thinking about going with epoxy, but I'm not sure if that's the best choice.

There are actually a lot of plastic snap-together garage floor systems available that can support vehicle weight. They tend to be way less expensive and way less messy than epoxy if you need significant prep work.
If you're looking for a solid solution, I'd recommend grinding down the current paint and applying a professional-grade epoxy. That's really the way to go for durability and a smooth finish!
Epoxy can be a bit of a hassle unless you're willing to pay a pro to handle it. I decided to use a snap-together tile system similar to RaceDeck. It's super easy to install and works great for car work without the mess of epoxy.
Are those tiles prone to scratching, though?

What do you need to grind it down? A diamond head floor grinder is necessary, right?
