I'm on the hunt for a good set of carving knives, specifically looking for 2 or 3 knives that won't break the bank—so around $50 is my price cap. Any recommendations for what's out there?

Honestly, it might be tough to find a solid set for that price. You're better off investing that $50 in a single high-quality knife. I'd recommend some brands like Badger State Blades, Flexcut Pro, DeepWood Ventures, or OCCT Knives. They all have great options that range from about $30 to $50. You’ll have much better success and satisfaction with one good knife!
I heard Beavercraft has a pretty decent beginner set (S06) with three knives and a strop for under $50. Anyone tried that?
A Stanley fixed blade utility knife might be a practical option too. It’s reliable and under the budget.
