I'm a first-time homebuyer and need some advice on the best order of operations for some renovations in my new place. I want to replace the old carpet with LVP (luxury vinyl plank) flooring and also repaint the walls and ceilings. My current plan is to remove all the carpet and baseboards first to get the floors ready, then paint everything, and finally install the LVP. Does this make sense, or should I do something differently?

That's a solid plan! But if you want to save time, you might think about using the old carpet as a drop cloth while you paint. Then, just pull it out once you're done. Just a heads up: if you do remove the carpet first and paint, be careful with paint drips on the floor. It could affect leveling when you lay down the LVP later.
