I'm looking for advice on re-piping my whole house, built in 1961, which still has the original galvanized pipes. I've been quoted $6,000 for just re-piping the house with PEX, or $8,500 if I include replacing the main line. I'm wondering if it's worth it to replace the main line too, or if I could get away with just doing the rest of the pipes. Has anyone had experience with this?

I totally recommend replacing the main line, too. I did mine about 15 years ago and my neighbor just did the house without upgrading the main. He ran into water pressure and sediment issues until he finally changed out the main line. Once he did that, all the problems disappeared!
I just re-plumbed my 1960's house to PEX and added a tankless water heater for about $7,300 total. I got a few estimates and they were all similar. If you’re comfortable with DIY, you might want to consider doing it yourself. PEX is pretty easy to work with, especially if everything's straightforward to access in your house. You could save a bit that way!

Honestly, I think you should just go for the full re-pipe. I used to own a 1927 house in New England and faced similar issues. The price you're quoted sounds pretty reasonable! Doing everything at once will save you from future hassle. Better safe than sorry, right?
