I've really messed up my first attempt at staining a solid birch butcher block from Home Depot. I ended up with big blobs of black gel stain all over. Since I've never done this before, I was wondering if I could just stain the bottom side properly this time and use it as the top instead. I'm planning to use it as a computer desk, so I want to make sure it's functional and looks decent. Is there any reason this wouldn't work?

You could definitely flip it over and use the underside! Just keep in mind that a proper finish is crucial, so make sure to seal both sides to avoid warping from humidity. The underside may have some blemishes, but if you're not eating off this surface, it's totally usable!
Before you decide to use the bottom, consider whether the top can be salvaged. If there are blobs of gel stain on the top, try wiping it down with mineral spirits to remove them. If that doesn't help, you might need to sand it down and start fresh. Wood is actually pretty forgiving, so don't lose hope!
