I've got a roof air vent above my kitchen, and I want to use it for venting my stove. However, I'm not sure how to connect a new duct to it effectively. I'd prefer not to remove the existing vent if I can avoid it, but I'm open to doing so if it's necessary. My main concern is managing any condensation that might drip down.

It sounds like you're missing a duct collar, which is the connector piece you need. You should look for a DC4 roof vent cap duct collar. It typically has a quarter-turn screw that will help secure it into your vent. That should make it easier to attach your new duct without taking everything apart.
