I started growing some Bok Choi indoors back in late February, but with the recent warm weather, I'm worried it might be bolting already. Should I just go ahead and pull it now to enjoy whatever I can salvage, or is there a chance it could still produce?

If you haven't done so already, keep snipping those stalks and enjoy the biggest leaves! I managed to keep some Bok Choi going through last summer by making sure to harvest before it could flower, and they actually thrived until frost! Try it with a ginger-tamari-tahini dressing; it's delicious!
If your Bok Choi is giving you trouble now, maybe try again in the fall? I’ve found chard to be an unkillable green that works well in tricky weather conditions.
Bok Choi tends to bolt pretty quickly, especially when the conditions are right for it. I've had similar experiences—some crops just don’t perform well. Personally, I stick to kale and chard, which have been more reliable for me.

Totally agree! Bok Choi is definitely one of the trickier ones in the brassica family for sure. I find it bolts faster than anything else and seems to attract all the pests too.
