I'm looking for options to set up scaffolding that can reach a height of 8 feet to mount two projectors that weigh 150 lbs when combined with their hardware. The challenge is my ceiling beams are only 9' 7" high, so a standard 12' scaffolding won't fit. I'm open to product recommendations or even DIY solutions. Any suggestions would be greatly appreciated!

Have you thought about renting a one-man lift? It’s mobile, so you could easily use it in tighter spaces. Just curious, which projectors are you hanging that weigh 150 lbs?
You might want to consider building a platform or a custom bar to go on a 6' baker's scaffold. That could be a quick and effective fix for your height issue without exceeding the beam limitations.
