I hate to rain on the parade, but you'd need to pedal really hard to get even around 50 watts of electricity. That's just not practical unless you're a dedicated cyclist. For reference, cheap e-bikes typically have motors around 150 watts, and they handle hills easily! It seems like your idea might be more of a fun gimmick than a real solution for power generation.
