I recommend going with cabinet grade 'Baltic Birch.' It's denser than regular plywood because it has more layers, making it more stable. Plus, it features a beautiful grain pattern, which is great since it will be exposed. Also, good Baltic Birch usually has minimal voids, so you can sometimes skip edge banding for a cleaner look, especially if you use B/BB grade for parts that will be visible.
Cabinet grade plywood is essential, but after that, just go with what you like most! It's all about the aesthetics you want to achieve.
Baltic Birch is definitely a solid option! However, don't overlook maple or oak; they can also give you a stunning grain. Just make sure to check the requirements for any coatings you might need before making a final decision.
