Since you're in ECE, have you thought about FPGA development boards? The STM32 Blue Pill could work well for ARM-based real-time applications. For a bit more complexity, check out the Digilent BAsys3 with the ATRIX-7 FPGA. While Arduino and Raspberry Pi are great for beginners, you might want to explore options like STM32 Nucleo or BeagleBone AI64 as you get more advanced.
Don't underestimate the ESP32; it's actually pretty capable and can handle some serious projects. Just define what you want to build first and choose the hardware that suits your project needs!
You might want to consider either a Raspberry Pi or even trying to build out a desktop computer. They both have their benefits depending on what you're trying to achieve.
