I just bought a prehung French door and I'm gearing up for the installation. I've noticed there are two wood pieces, about 4x4 each, attached to the top side of the door—one is white, and the other matches the door color. It really depends on your rough opening space. If there's enough room above the door, you can leave them. But generally, they should be removed to avoid any issues.
Yep, those are shipping blocks meant to keep the door safe during delivery. Definitely take them out before installing! And hey, if this is your first time with door installation—good luck! You'll do great!

You might want to check the instructions, but since it sounds like you didn't get any, the general rule is they need to come out unless you're sure they won't interfere with the fit.
