What Should I Do with My Sprouted Potatoes with Long Roots?

I've got some potatoes that have been sitting around for ages, and now they've sprouted with roots that are almost as long as my arm! I'm not sure what to do with them. Should I just throw them out, eat them, or would it be a good idea to plant them? I even read that they might be similar to Jicama, but they look pretty old, dirty, and dry.

I’d say go for planting them! Just make sure to cut off the sprouted part but leave a bit of the potato connected. You'll be surprised how well they can grow!

Definitely plant those potatoes! Just a heads up though, sprouted potatoes aren’t safe to eat, so definitely skip that option.

If the sprouted potatoes are in good shape, cut them up with a few eyes per piece and get them in the soil. It’s planting season, so you’re in luck!
