I'm expecting a good harvest of tomatoes, zucchini, cucumbers, and peppers this summer. What are some effective methods for preserving these vegetables so I can enjoy them during the winter months? Any tips would be appreciated! Thanks!

Yeah, I've tried freezing shredded and spiral-cut zucchini, but honestly, it wasn't my favorite. You might want to avoid freezing unless you really love zucchini bread. For cucumbers, I think pickling is the best bet! Peppers, on the other hand, freeze really well, so that's a good way to go.

I usually can my tomatoes into salsas or sauces, which is a hit for winter meals. For peppers, cutting them into pieces, freezing in a single layer, and then vacuum sealing works wonders.
