I'm looking for advice on the best glue to use specifically for bonding melamine to wood. Do I need a special type of epoxy for this, or is there something else that works better? Also, does epoxy have a shelf life? I've heard complaints about it yellowing over time, but since I'm only concerned about sticking things together, price is a big factor for me.

For melamine bonding, I'd suggest going with contact cement or rubber cement instead of epoxy. It's just better suited for that material and will give you a stronger hold without any of the downsides you might face with epoxy. I'm surprised so many folks jump to epoxy for this!
You can technically use epoxy like JB Weld or Gorilla Glue; it should handle melamine just fine. Just make sure to rough up the surfaces with sandpaper first to improve adhesion. But honestly, if you're working with that cheap stuff, I'd recommend mechanical fasteners. They're way more reliable than glue on slick surfaces.
