Hey fellow woodworkers! I'm currently working on a small cherry cabinet for our office, and I'm wondering if a single coat of wipe-on poly will be sufficient for the inside. This cabinet will have shelves for storing papers, pens, and office supplies, but no drawers. I know applying a second coat is a quick and easy process, but that's not the concern here. Would one coat do the trick?

If you're thinking about 'getting away with' just one coat, that's a red flag. You might save time now, but it could lead to more problems later. Doing it right from the start is usually the best route.
For the inside of a cabinet, one coat could probably work fine for storing basic stuff like paper and pens. However, if you're putting in the effort to build it, why not do at least two coats? It's worth it for a nicer finish!
I really wouldn't recommend just one coat; it's unlikely to provide the protection you want. A thin coat is better, so consider applying several layers with a light sanding between them for the best finish.
