I'm considering building a small bathroom countertop using MDF or a similar material that may be waterproof. My plan is to glue some 1/2" x 6" cedar planks on top and then cover the whole thing with epoxy. However, I'm worried about potential issues like shrinking or cracking. What do you think?

Using commercial water-resistant MDF isn’t a great idea for a cedar countertop. Cedar will definitely expand and contract as moisture levels change, and MDF won't allow room for that. It could lead to a countertop that warps like a potato chip!
MDF isn't waterproof at all! I would recommend going with marine deck plywood instead. It’s a much better base for your cedar, especially in a bathroom.
