I haven't personally used pebble trays since I've heard their effect on humidity can be pretty minimal. But in really dry environments like yours, even a little extra moisture can help! The idea behind pebble trays is that they keep the pots out of standing water, which can lead to root rot. If you're concerned about stability, try using pea gravel instead, or even turn a plant saucer upside down and place your pot on it, filling the tray with water instead of pebbles. That might help!
