I'm wondering if it's possible to use a table saw to joint and glue wood pieces together in a way that creates a seamless look, similar to what you get with a jointer or planer. Are there any specific techniques or tools I should use?

Absolutely, you can achieve a nice joint using a table saw sled! Basically, you create a sled that holds the wood tightly against the fence, which helps you cut a straight edge.
