I'm looking to seal the bottom of the wall in my garage to convert it into a workspace. The drywall currently stops about 6 inches above the concrete floor. What are the best methods to properly seal that up?

Using PVC trim is a great option for sealing the bottom. It’s durable and can withstand moisture better than regular wood. Plus, it looks nice too!
Just a heads up, leaving that gap is often intentional to prevent damage from any water that might come in. Is it completely dry there? If you’re sure there's no risk, you could consider finishing the wall with drywall down to the floor, but it might not be necessary if you’ve got other protections in place.
We've built our house on a steep incline, so I highly doubt any water would be an issue. We’re adding a weatherproof door and an AC unit too, so I think we're good!
