I'm building a tomato trellis with 8 ft T-posts for my Moneymaker tomatoes, which produce a heavy yield. I'm uncertain about the type and size of the horizontal pipe that should go across the top. Is metal the best option for strength, or can PVC hold up? Additionally, what size elbows or T-joints would be best for a secure setup? Any advice based on experience with sturdy trellises for heavy tomatoes would be greatly appreciated!

Definitely go for a 3/4" EMT; it should provide the strength you need for your trellis without sagging under weight.
I wouldn't recommend PVC as it tends to flex too much, especially beyond 3-4 feet. If possible, try to install the top bar snugly between the two posts rather than on top. This setup helps stabilize the T-posts against leaning as the weight of the plants increases. For my setup, I used U Posts which have holes and hooks for added support. I ran a 9 gauge utility wire through the posts and added EMT on top for extra sturdiness. Just ensure your setup is secure! Check out how my 8-ft bed turned out!
A 3/4" EMT should work fine to span the 8 ft garden bed without needing an extra T-post in the middle.
I see you mentioned U-posts, but I'm already set on T-posts. Just out of curiosity, what kind of pipe did you use on top?
