I'm looking for a switch that can turn itself off after being activated, specifically for my garbage disposal. Ideally, I want a switch that has to be held down, forcing the user to stay away from the sink while the disposal is running. I don't want any built-in switches that are installed in the sink itself, as the switch needs to be a bit further away for safety. Does such a product exist?

Check out Zooz; they have a momentary switch, model ZAC99. It's suitable for up to 15A and could work great for your needs. I've used them for smart applications, so they're pretty versatile!

Also, I really like the air switch at my place, which is similar to a soap dispenser button. Even with wet hands, it keeps you safe from electric hazards. Just remember, that's not a momentary switch, so you’ll need to toggle it off manually after use.
You might want to look for a "momentary" switch. These types of switches need to be held down to stay on, then automatically revert to the off position. I believe Leviton makes one labeled for disposal use, but I'm not sure if it's easy to find lately.
