I recently picked up a used Wii and I'm not too keen on spending extra money on an AV cable. I'm considering making one myself by using an RCA cable and designing a completely custom 3D printed Wii AV jack. Does anyone know if this is feasible? I have some experience with splicing cables and a wealth of knowledge in 3D printing, so I'm eager to give it a shot!

It sounds like an interesting project, but you might want to start by finding a schematic of the Wii's video port. Knowing the pinout will really help you out! I mean, if you're comfortable with your skills, go for it! Just be prepared for a bit of trial and error along the way.
You can totally attempt it, but be ready for a challenge! Grab the Wii AV pinout online, splice those RCA cables, and just hope your 3D print holds up. Of course, buying a cheap $5 cable might save you some trouble, but if you're after a custom touch, then why not go for it!
