I recently checked out my attic and found that it reaches a scorching 150°F on an 80°F day. My house was built in 2017, and I've noticed that the upstairs feels significantly hotter than the downstairs. The attic has 7 ridge vents and ventilated soffits, but only about 12 rafter bays have baffles. Should I consider adding more baffles, or is there something else I should do to solve this issue?

It's pretty normal for attics to get super hot, especially in direct sunlight. Check the temperature of the ceiling drywall too; sometimes it's the windows or air circulation that's making the upstairs feel hotter. Also, double-check your AC setup; if the return duct is poorly designed, it can mess up the airflow.
