I'm hesitant to just go with drywall since that would block off access to the pipes and electrical wiring. I'm looking for other flexible options that don't sacrifice accessibility. I've considered tiles, but I'm not thrilled with their appearance—are there any good alternatives like slats or something else you might suggest? Any ideas would be greatly appreciated!

A drop ceiling might be your best bet! There are some really nice decorative tiles available that can resemble old-fashioned tin or use luan for a warmer look. It maintains easy access to everything above while still looking decent—definitely a stress reliever when you've got to get to those pipes and wires. I'd say avoid drywall unless you want a future headache!
Honestly, consider what you really need access to. If you only have to deal with it occasionally, maybe drywall isn't so bad. But I'd still lean towards drop ceilings because they're just less stressful for future repairs. Plus, you can customize them a bit with different styles!
