I'm thinking about getting a wall-mounted Murphy table to make my kitchen countertop more functional, but I'm running into a bit of a problem. The specific spot I want to install it doesn't have a stud. I was considering using snap toggle anchors for the installation. Is that a good idea? Also, can these toggles handle varying weights, especially if I place heavier items like a pressure cooker on the table?

Totally, you can use snap toggles! They'll work just fine, but keep in mind they might not hold up as well under constant use, especially with a Murphy table.
It might be safer to add a horizontal board against the wall that reaches the studs, then mount the table to that. A piece of 1x2 that touches two studs would provide great support and make it less likely to fail with weight changes.
You could also check to see if there's at least one stud within reach. Since the table is 19" wide, you might get lucky with at least one screw that's secured directly into wood.

True, but remember that with any moving furniture like a Murphy table, the wear and tear can weaken the drywall over time, so just be cautious.
