I've got this outdated intercom mounted on my hallway wall, and I'm looking for suggestions on what to replace it with. I really want to avoid having to patch up drywall. Would it be feasible to install a recessed outlet instead? How would that look?

If you can install a recessed outlet, something like an Echo Show 15 could work great as a replacement! It's modern, functional, and will fit nicely into that space without needing too much extra work.
Another cool idea is converting the old intercom into a Bluetooth receiver. There are plenty of tutorials online to help you out. Just make sure to be careful because they usually operate at 120 volts.
Recessing an outlet could definitely work, but be prepared for some fishing around with cables. Just a heads-up, you might still need to patch up the drywall after all. Is there a chance that you'll want to change the whole wall setup later on?
