I'm working on a desk out of butcher block wood, but I noticed the instructions don't mention sanding before applying the first coat of polyurethane. Should I sand, and if so, what grit should I use?

Absolutely, you should sand your butcher block before putting on a finish! However, just a heads up, even though you’re using it for a desk and not for food prep, polyurethane might not be the best option if you're concerned about finishes. A food-safe oil finish is often recommended for butcher blocks, but since yours is a desk, sanding is key. Aim for at least 220 grit for the best finish.
