Is it practical to use standalone cabinets with a butcher block as a kitchen island?

I'm currently renting a place with a cramped kitchen that lacks storage space. We received a ton of appliances as wedding gifts, which has motivated me to cook and avoid processed foods. I've considered different island options but they either seem flimsy or are too heavy and expensive. Instead, I'm thinking about just buying a few standalone cabinets and placing a butcher block on top for a countertop. This way, it's easier to disassemble when we move, which seems likely since we've been here five years. I'm looking for any potential flaws in this plan to adjust it before making a decision. For sure, just make sure to secure the cabinets together and possibly to the wall for added stability. Some people skip anchoring them to the floor, but it’s really about how you want to set it up.
