I've been curious whether it's possible to grow carrots underwater, like in a fish tank or something. Are there any techniques that could work, or is it just a no-go?

Nope, you can’t grow carrots underwater. They really need sunlight and certain minerals that won’t be available in that kind of environment. Carrots are definitely meant to be grown in soil with exposure to light.

Will it ever be possible to grow them underwater in the future? That would be so cool to see an underwater carrot!
