What Can I Make with All These Roma Tomatoes?

I accidentally bought what I thought was a Golden Jubilee tomato plant, but it turned out to be a Roma tomato plant! Now I'm swimming in Roma tomatoes and I'm looking for creative ways to use them. I'm not interested in pasta sauce since I already have San Marzano tomatoes for that. Any other ideas?

You can make salsa or a refreshing gazpacho with those Roma tomatoes. They’re perfect for both! Just chop them up and mix with some seasonings for that zesty kick.

While some might say San Marzano is better, you can still make great stuff with Romas! How about bruschetta or some tasty tomato and mozzarella sandwiches? You could also try making a tomato jam or canning them whole for later. For a unique twist, pop them in the oven to make slow-roasted tomatoes—they're delicious and keep in the fridge for a few weeks!

If you want something different, consider making sun-dried tomatoes in your oven or dehydrator. They concentrate the flavors so well! You could even just eat them fresh like an apple if you're adventurous. Who knows, you might love it!
