I'm trying to create a unique edge profile that has a rounded look but with distinct edges on either side of the curve—kind of like the one in this image: https://i.imgur.com/ikJgMQf.jpeg. I remember seeing a reference to something called a "thumbnail" profile in some Foureyes furniture videos, but I can't find those videos anymore. I've noticed that the term "thumbnail" seems to be used differently elsewhere, so I'm looking for guidance on what specific router bit would help me achieve this effect without just doing a typical roundover.

I’d call this a convex edge. A quick Google search for "curved router bits" should show you options that fit what you're looking for!
You could use a large radius roundover bit but only let it cut with the top cutter. Make sure to use a table with a fence for accuracy!

It sounds like you're looking for a "fingernail" profile, not a thumbnail. That might be what you’ve seen in those videos!

If you're comfortable with sanding, you might achieve the curve with a sander instead. But to keep that crisp edge, a router is probably your best bet.
You might, but I'm not good enough with a sander to keep it consistent without losing those sharp edges.
