I've been living in my house for over a decade, and I found a bucket of unopened paint (about 5 or 10 gallons) that came with the place. My ceilings are looking pretty dingy, so I'm wondering if that old paint is safe to use and will stick well to the walls. What do you think?

You definitely have to check it out first. Often, the seals aren’t perfect, and paint can separate or skin over after years. If it's still liquid, though, it should be usable! Just remember, paint goes bad mostly from exposure to air, not just age itself.
Honestly, ceiling paint is pretty cheap these days. It might not be worth risking it with old paint. If you do decide to use it, make sure to prime first; otherwise, you might see that dinginess bleed through.
There's a good chance that paint isn't in great shape after so long. You'll need to open it and take a look.
