I've been struggling to use my bypass shower door efficiently. When I step in from the opposite side of the shower head, I always end up getting splashed by cold water first. To make matters worse, the handle on the door closest to the shower head is on the inside, which means I have to squeeze between the toilet and the shower just to step out. I'm considering installing a smaller handle on the left door from the inside, but I'm wondering if there's a better solution to this problem.

Have you thought about switching to a handheld shower fixture? If you get one that has both handheld and static options, you can easily point it away from you while waiting for the warm water. It's super simple to install and could make a big difference.
With your mixer, you can adjust the temperature even at low pressure. Just keep the shower head facing the wall and let it run at a low setting until the hot water comes through. This way, you can avoid getting doused with cold water. If your water heater is far, you could turn on the sink tap to speed up getting hot water to the shower.
One thing you could try is to open the door closest to the shower head. Turn the water on to get it to the right temperature, even if that means sitting on the toilet to do it. Once the water is good, close that door and then open the other door to get in without any cold water splashing you.

Another idea is to take off the handle and switch its placement to the other side of the door. This way, the doors could close from the opposite sides instead.
Wouldn't I need handles on both sides of the same door since one side is blocked by the toilet?

A handheld/static combo is definitely on my wishlist. Adding that along with a smaller handle on the inside of the left door might be the way to go, so I won't have to move the right side of the door by the toilet.
