I'm looking for a suitable sheet material that's 1/4-inch thick, at least 3 feet long (or wide), and can be easily cut with a blade or jigsaw. It also needs to be moisture and/or mildew resistant, as I plan to fix it to steel studs behind drywall to fill a gap. I'm not very knowledgeable about these materials, so any suggestions would be greatly appreciated!

You might want to check out some PVC sheets from big box stores. They can be a bit pricey for a shim material, but they do the job well. You could also use 1/4-inch drywall, which is generally more affordable.
